Lydia Holmes and John Clarke run a 200 sq ft burrito shed in a Home Depot parking lot in California.

They recently explained the appeal of the spot 👇

You have low overhead, low rent compared to an actual brick-and-mortar, and you’re right in front of a Home Depot, and everyone has seen the Costco food court. So, we were like, we have to get in here.

They opened LJ’s Lil’ Cafe in 2021 with a hot dog stand vibe. But it was the breakfast burrito that kept selling out – 25 crispy tater tots, a full cup of cheese.

When a freelance writer covered them in Eater LA, sales went vertical 👀

That Thursday, we probably did maybe, you know, $300 in sales. After the Eater article came out that night on Friday, I think immediately we hit our first $1,000 sales day. And then, I don’t think we’ve done less than a $1,000 sales day after that.

They now do 600 burritos a day on weekends, opened a brick-and-mortar last July, and pulled $2.3M in combined sales last year 🤑
